Salad Month

May is National Salad Month. Celebrate by trying new fruits and veggies, and making delicious salads!

 

Make a Colorful Lunch

The food we eat throughout the day can help give us energy, improve our concentration and memory, and help us stay strong and well. That is why it’s important to eat a variety of foods during the day. Especially important are fruits and vegetables as well as protein. Whole grains are important too - check out this interesting grain guide.

Let's Do Spring Crafts!

There are so many fun crafts you can do in the winter. Below, are some ideas. Tutorials can be found on Google or YouTube.

Write a Food Journal

A healthy and regular eating routine can bring balance to your digestion, help you sleep better, and help you to wake up refreshed. Write down the food you eat each day for a week. In addition, write down how you feel after eating and the times during the day when you feel hungry. At the end of the week, reflect on your eating routine. Are there changes to your meal routine you might want to try? You can use the questions below to guide your food journal.

Spring Equinox

Spring begins on March 20th with the Spring Equinox in the Northern Hemisphere. Celebrate the changing season with a nature walk! Take note of at least 3 things you see that are a sign of Spring. Look high and low.

Food Discovery Boards

One of our favorite ways to encourage kids to explore new flavors and foods is by making it into a discovery challenge! These seasonal or themed bingo boards help kids get out into nature, try new things, and feel good about being curious!

 

What's in Season?

Spring is strawberry season! They are high in vitamin C and can be used in sweet and savory recipes or enjoyed on their own. Make this delicious strawberry shortcake to enjoy Spring! This cake is refreshing, not too sweet, and is sure to impress!

 

Ingredients-

Cake-

  • 4 eggs
  • 1 cup + 2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup cake flour**
  • 3 tbsp melted butter
  • 2 tbsp milk
  • 1 tsp vanilla extract

**can be substituted with 1 cup minus 1 tbsp of all-purpose flour and 1 tbsp of cornstarch

Cream-

  • 1 cup cold heavy cream
  • 1/4 cup sugar (adjust to taste)
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

Toppings-

  • Strawberries
  • Chocolate shavings (optional)
  • Powdered sugar (optional)

 

Instructions-

For the cake:

Preheat the oven to 350°F. Grease and line two 8-inch cake pans. In a large bowl, add the eggs, sugar, and salt. Put it over a small pot of boiling water, making a double boiler. Then, whisk vigorously until the sugar dissolves. Then, take off the pot and use an electric mixer to whisk until the mixture is thick and fluffy. Meanwhile, in a separate bowl, sift the flour. Finally, in another bowl, combine the milk, butter, and vanilla extract. Fold together the whipped eggs, flour, and milk mixture with a spatula until combined. Make sure all the flour from the sides and bottom is scraped off and mixed in thoroughly, making sure to avoid overmixing. Finally, pour equal amounts of batter into each cake pan and bake for 25 minutes, or until a toothpick comes out clean. Let the cakes cool for 8-10 minutes, run a knife around the edges of the pan, and flip out onto a wire rack to fully cool.

 

For the cream:

In a large bowl, pour in the heavy cream and start whisking with an electric mixer. This can also be done with a hand whisk, but it will take much longer. After soft peaks occur, slowly pour in the sugar and the vanilla extract. Whisk until there are stiff peaks. Taste to make sure everything is to your preference and adjust accordingly.

 

Assembly:

Put one of the cakes on a cake plate and add on some of the whipped cream. Place sliced strawberries all over and add a little bit more cream to ensure the next layer sticks on. After placing the second layer, add more cream and garnish with strawberries and optionally, chocolate shavings and powdered sugar. Frosting the sides is optional, but I think it looks better as a more rustic cake. Chill for an hour and then enjoy!

  • Grumpy Monkey Spring Fever by Suzanne Lang- This picture book shows how to cure spring fever by telling the story of one young monkey. When he gets sick and grumpy, all the other jungle animals offer him help to bring his true self back.
  • Hello World! Garden Time by Jill McDonald- This nonfiction picture book is cheerful and informative, teaching your little one more about gardens. The facts are easy to understand and teach how food gets from gardens to our tables.
  • Don't Touch That Flower by Alice Hemming- In this picture book Squirrel is a bit too protective over a newly bloomed flower, but Bird shows him how to properly let the flower grow.
  • Too Many Carrots by Katy Hudson- This picture book shows what happens when you like something a little too much. In this book, Rabbit loves carrots and has collected too many to count. It is lovely illustrated and perfect for young readers!
  • Goodbye Winter, Hello Spring by Kennard Pak- In this picture book, one young boy and his dog take a stroll through nature to observe the changes from Winter to Spring. They have conversations with everyone around and slowly can say goodbye to winter and hello to spring.
  • Fletcher and the Springtime Blossoms by Julia Rawlinson- This picture book follows Fletcher the Fox who explores all the different surprises that Spring brings!
