Make a Colorful Lunch

The food we eat throughout the day can help give us energy, improve our concentration and memory, and help us stay strong and well. That is why it’s important to eat a variety of foods during the day. Especially important are fruits and vegetables as well as protein. Let's Make a Puzzle- Feb at Home

Write a Food Journal

A healthy and regular eating routine can bring balance to your digestion, help you sleep better, and help you to wake up refreshed. Write down the food you eat each day for a week. In addition, write down how you feel after eating and the times during the day when you feel hungry. At the end of the week, reflect on your eating routine. Are there changes to your meal routine you might want to try? You can use the questions below to guide your food journal.

Winter Solstice

Winter begins on December 21st with the Winter Solstice in the Northern Hemisphere. Celebrate the changing season with a nature walk! Take note of at least 3 things you see that are a sign of Winter. Look high and low.

Food Discovery Boards

One of our favorite ways to encourage kids to explore new flavors and foods is by making it into a discovery challenge! These seasonal or themed bingo boards help kids get out into nature, try new things, and feel good about being curious!

What's in Season?

Winter is Orange season! Brighten up these months by making dishes with citruses, like these delicious cranberry-orange scones! These scones are crispy on the edges, soft on the inside, and have the refreshing flavors of orange and cranberry.

 

Ingredients-

  • 3.5 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tsp salt
  • 1.5 tbsp baking powder
  • 6 tbsp of chopped cold, unsalted butter
  • 1.5 cups cold heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp fresh orange zest
  • 1/2 cup dried cranberries (preferably unsweetened)

 

Instructions-

Preheat the oven to 425°F. In a large bowl, whisk together the flour, sugar, salt, baking powder, and orange zest. Add in the chopped butter and mash together until some crumbs form. Then, add in the cranberries, lightly mix, and finally, add the heavy cream and vanilla extract. When the dough forms, turn onto a clean, lightly floured surface. Roll out to a 1/2-inch thick disc and start cutting out shapes with a sharp knife or cookie cutter. Space out on a lined baking tray and refrigerate for 10 minutes. After 10 minutes, bake for 12-14 minutes, rotating the tray after the 8-minute mark. Let cool for 10-15 minutes and enjoy!

  • The Snowy Day by Tom Brenner- This picture book follows two siblings as they explore the changing seasons through nature.
  • A Loud Winter's Nap by Katy Hudson- In this picture book, one tortoise must decide whether to sleep through Winter again or not. See what his friends do to convince him!
  • Snowmen at Night by Caralyn Buehner- This picture book beautifully illustrates what snowmen do while we sleep: play, of course!
  • Bright Winter Night by Alli Brydon- This picture book will take you on an adventure with a group of animals to the Northern Lights. It's all about adventure, friends, and fun!
