Make a Colorful Lunch

The food we eat throughout the day can help give us energy, improve our concentration and memory, and help us stay strong and well. That is why it’s important to eat a variety of foods during the day. Especially important are fruits and vegetables as well as protein. Write a Food Journal

A healthy and regular eating routine can bring balance to your digestion, help you sleep better, and help you to wake up refreshed. Write down the food you eat each day for a week. In addition, write down how you feel after eating and the times during the day when you feel hungry. At the end of the week, reflect on your eating routine. Are there changes to your meal routine you might want to try? You can use the questions below to guide your food journal.

Summer Solstice Walk

Summer begins on June 20th with the Summer Solstice in the Northern Hemisphere. Celebrate the changing season with a nature walk! Take note of at least 3 things you see that are a sign of Summer. Look high and low.

Food Discovery Boards

One of our favorite ways to encourage kids to explore new flavors and foods is by making it into a discovery challenge! These seasonal or themed bingo boards help kids get out into nature, try new things, and feel good about being curious!

 

What's in Season?

July 8th is National Blueberry Day! Celebrate by making delicious lemon blueberry muffins. Recipe below.

 

Ingredients-

  • 1 stick of butter, softened
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp vanilla extra
  • Zest of 1 lemon
  • Juice of half a lemon
  • 1 cup buttermilk**
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1.5 tsp salt
  • 1 cup fresh or frozen blueberries

**buttermilk can be made with whole milk and 1 tsp of lemon juice or vinegar

 

Instructions-

Preheat the oven to 375°F. Whisk the butter, sugar, and lemon zest together until light and fluffy. Add in the egg and vanilla and continue whisking until combined. In another bowl, mix the flour, baking powder, and salt until combined. To the butter mixture, add half of the flour mix and the milk. Fold in, and add in the remaining flour and the lemon juice. When almost fully combined, add in the blueberries. Make sure not to overmix or the muffins may be a little dense. Scoop batter into muffin tin and bake for 15 minutes. Then, reduce the temperature to 350°F, rotate tray, and bake for 10 more minutes. Use a toothpick to make sure muffins are cooked through. Let cool for 10-15 minutes and enjoy!

  • Summer Is Here by Renee Watson- This picture book is about all the fun things Summer brings -- from fresh fruit to family cookouts to overflowing gardens.
  • Plátanos Are Love by Alyssa Reynoso-Morris- This picture book transitions through seasonal changes and various activities during the different seasons, and when it finally comes to Summer, will it be warm enough for ice cream?
  • Before We Eat: From Farm To Table by Pat Brisson- This picture book illustrates the process of how food gets from the farm to our dinner tables. It's informative and a great reminder of the hard work it takes to get our food!
